From the Ring to the Freezer — A Fighter’s Journey into Chocolate
The Story Behind Las Vegas' Legendary Ice Cream Taco


I’m Xenon Mallari, founder of Happy Ending Chocolate. Before I ever learned to temper chocolate or build an ice cream taco, I was a three-time national champion boxer, chasing Olympic dreams and training in Las Vegas gyms. I didn’t come from culinary school or corporate kitchens — I came from the ring, the bar, and the real world.
After my Olympic path ended, I found myself bartending by night and experimenting with chocolate by day. The hustle was real — I lost my first home during the housing crash, moved to California to reset and sharpen my craft, then came back to Las Vegas with a dream in one hand and a whisk in the other.
In 2019, during a sweltering Vegas summer, a pop-up event with a local coffee shop inspired me to invent something no one else had: the Happy Ending Ice Cream Taco. That same summer, a slot at a local music festival confirmed we were onto something special.
Since then, I’ve built this company one delivery, one truffle, one taco at a time. We went viral during the pandemic when I hand-delivered tacos to customers across town — and I’ve been all-in ever since.
I’m a proud UNLV grad, a husband, a soon-to-be father, and a craftsman who believes great chocolate doesn’t need a French accent — just soul, precision, and a little bit of grit. Every bonbon and taco we make is a reminder: you don’t need permission to build something beautiful. You just need heart.
